Whatever Wednesday: Wholly Guacamole

Greetings friends and strangers alike! For today’s Whatever Wednesday, I thought it would be awesome to get real and personal for a few minutes. And I mean VERY personal. So buckle up.

If you know me, you know that I love avocados. I grew up in Southern California, where my grandma had not one, not two, but THREE avocado trees in her backyard. Every time I visited her, we ate avocados. Then, when I moved in with some roommates in college, we had an avocado tree in our front yard (yes, the hallelujah choirs sang very loudly in my heart)! Truth be told, I could probably eat avocados everyday for the rest of my life and would never grow tired of their savory goodness. It is not an obsession necessarily, but it is most certainly a lifestyle.

Now along with this weird but beautiful love for avocados has also come an exquisite appreciation for GOOD guacamole. Yes, there is good guacamole and there is not-so-good guacamole. If you do not know the difference, you have my condolences. Here on This Darling Adventure, though, I would like to share with you my go to recipe for delicious guacamole.

Wholly Guacamole!

You Will Need:

  • 4 ripe avocados (pitted, scope from peel, roughly chopped)
  • 1 medium tomato (seeded, diced)
  • 1/2 medium onion (red or yellow work well, diced)
  • 1 clove garlic (minced)
  • 1/4 cup freshly chopped cilantro (or 1/2 cup if you LOVE cilantro)
  • Juice from 1/2 to 1 lime (depending on how juicy it is)
  • 1/2 tsp cumin
  • Salt and pepper to taste

What to Do:

In a medium bowl, mash up those avocados with a fork or a potato “masher” until texture is mostly smooth with small chunks of avocado still intact. Add in the diced tomato, diced onion, minced garlic, and chopped cilantro. Fold until well-incorporated. Then add the lime juice and fold until evenly distributed. Throw in that cumin, stir, and then add salt and pepper to taste. Serve with fresh tortilla chips (or really anything else you can think to put guacamole on).

*Fun fact: if you do not want your guacamole to turn brown as quickly, be sure to save one of the avocado pits and place it in your bowl of guacamole. It makes for an interesting looking centerpiece, but it will do the trick just fine.
