Potato Leek Soup

A few years ago I discovered leeks and they have quickly become one of my favorite additions to dishes of all kinds and this Potato Leek Soup is no exception. Velvety and aromatic, this soup combines the harvest-inspired flavors of sauteed leeks with the comfort of hearty potatoes and garden-fresh herbs, creating an incredibly wholesome, and soul-warming dish.

Roasted Cauliflower Soup

If you are looking for creaminess, without the heaviness of traditional dairy-based soups, look no further than this Roasted Cauliflower Soup. It’s silkiness comes from the roasted cauliflower, while fragrant herbs give it its exceptional flavor. Better yet, it is incredibly simple to whip up, requiring only seven ingredients, ideal for last-minute dinner plans or a busy weeknight meal.

Cabbage Soup

Hearty and produce-rich, this Cabbage Soup is incredibly easy to make and a great way to utilize that late-summer or early fall harvest. Filled with aromatic flavors from garden-fresh veggies, fire-roasted tomatoes, crunchy cabbage, and fragrant herbs, this soup is incredibly flexible and deeply nourishing.

Parmesan White Bean Chicken Soup

There are so many reasons to love this Parmesan White Bean Chicken Soup with Roasted Delicata Squash. Maybe its the chicken packed with flavor from being cooked alongside shallots, broth and fragrant herbs. Maybe its the grated parmesan, harvest-fresh squash and kale, or creamy white beans. Or maybe it is that it can be prepped in the morning and let simmer all day in the crockpot. Whatever it is, it is absolutely a must-make soup this season.

Red Lentil & Carrot Soup

Earthy, warming, and deeply flavored, this Red Lentil & Carrot Soup will quickly become a new favorite this fall. Made with wholesome ingredients like fresh carrots, coconut milk, and protein-packed red lentils, it is sure to keep you warm and satisfied. But what sets this soup apart is truly the blend of warm spices like cinnamon, turmeric, cumin and paprika, which help to give it a wonderful depth of flavor.

Sometimes the simplest of meals are the ones that help to make a season feel most special – a warm bowl of soup, freshly baked bread and good conversations with the ones we love. As the days grow shorter and the evenings grow cooler, I hope these recipes inspire you to embrace the simple pleasures of the season and savor the coziness that fall has to offer.
